Our Story
Dillan and Shelby Mena were living in Amarillo, Texas, where Dillan was employed as a professional chef. A lifelong passion for cooking led to a degree from the Colorado Mountain College culinary program.
Dillan worked during high school at The Bagel Place in Amarillo where he mastered the art and developed a love for this ancient bread form. Subsequent to graduation, they settled in Amarillo where Dillan worked as executive chef for both sports bars and fine dining restaurants.
Always looking for an opportunity to start their own business, they pounced upon the vacuum left by the Einstein closure. Operating out of their kitchen baking small batches, they were encouraged by the enthusiasm their bagels generated. Adroit users of social media, they placed notices on local Facebook groups and demand literally exploded.
They were off and running and struggling to meet that demand. When Cindy Roberts of Way West Pizzeria and Grill in Jamaica Beach offered her food truck and restaurant commissary services everything took off and they never looked back.
Leaving his position at UTMB, Dillan and Shelby now work full time at their bagel business. They have since opened their brick & mortar & converted the food truck into MAC-IES- Smashburgers & Fries.
